A project to promote Bridlington Bay Lobster is investing in research into the best way to freeze the crustaceans.
300 tonnes of lobster worth more than £4 million was brought to shore in Bridlington in 2019 but much of it is exported.
The East Riding Council is part of an initiative to get more local restaurants to use the local product.
To make that happen Director of Economic Development, Claire Watts, says they need better ways of freezing the food:
